The work analyzes the development trends of the fast food market in Russia. The main problems in the functioning of public catering enterprises for the period 2017-2022 are identified, and the causes of these problems are indicated. An analysis of the development of the situation regarding the fast food segment was carried out. Factors have been identified that have a significant impact on the formation of a further picture of changes in consumer preferences.
