The article presents the results of research on the biochemical and technological properties of winter rye and winter wheat grain from the Tatarstan selection of the latest generation. It describes the characteristics of grain quality indicators and their variation in six varieties of each crop in the Predkamsk zone of the Middle Volga region between 2020 and 2023
