Abstract (English):
The article analyzes methods for concentrating fruit and berry juices. Their advantages and disadvantages are revealed. A conclusion has been made about the best modern method of concentration - the use of membrane technology for the production of high-quality fruit and berry juices with a high content of useful substances.
